Chocolate Chip Muffins
Ingredients:
9 oz. self raising flour
3 oz. light brown sugar
1 teaspoon baking powder
1 oz. cocoa powder (optional)
8 fl. oz. milk
4 oz. chocolate chips
2 oz. butter
2 eggs
1 teaspoon vanilla essence/extract
Method:
Pre-heat the oven to 200°c/400F/gas mark 6.
Pour the butter and sugar into a large mixing bowl and add vanilla essence/extract.
Next add the two eggs.
Measure out the flour and baking powder and pour into the bowl.
Lastly add chocolate chips and milk.
Stir all the ingredients together in the mixing bowl.
Whisk the mixture until it has a mousse-like texture.
Place the mixture into a baking tray/muffin tin and cook for approx. 10-20 minutes, until the muffins bounce back when gently pressed.
Allow to cool before serving, or enjoy hot muffins on a cold evening!
